Curry-spiced Lamb Burgers

Spicy little numbers…

Ingredients:
1 lb. ground lamb
1/2 onion, peeled and cut into chunks
1 jalapeno, seeded and minced
1 tspn. ground coriander
1 tspn. ground cumin
1/2 tspn. turmeric
Salt and pepper to taste
Hamburger buns or pita bread
Garnishes: mango, red bell pepper, mayo, lettuce

Instructions:
Preheat grill to medium-high.

Put onion in a food processor and pulse until coarsely ground. Put lamb, onion, jalapeno, coriander, cumin, turmeric, salt and pepper in a bowl and mix well. (I used my hands.) Shape into four burgers.

Put burgers on grill and cook for about 5-6 minutes on each side.

Serve hamburgers on hamburger buns or in pita bread with garnish. We had ours on hamburger buns because the pitas I bought turned out to me moldy. I HATE it when that happens. We had the burgers with sliced mango, thinly sliced red bell peppers and mayo.

What did the family think? Everybody are it which totally surprised me because these are a bit spicy with the jalapeno. I think what made these super yummy was the crispiness of the red bell peppers coupled with the sweetness of the mango which kind of balances out the spiciness of the burger.
We were going to have these with corn on the cob and some fruit, but I totally forgot about the corn on the cob. I guess we’ll save it for another dinner.

Banana Dogs

Banana dogs are not for the more gastronomically sophisticated people in your house…but they might be great for the ten and under crowd. I used to make these all the time when our oldest was younger and then just forgot about them. We brought them back this summer though and they are a hit all over again.

Ingredients:
Peanut butter
Jelly
Hot dog bun
Banana

Instructions:
Put peanut butter and jelly on a hot dog bun like you were making a peanut butter and jelly sandwich. Put a banana where the hot dog should be. Enjoy!

What does the family think? Our oldest has eaten these just about every morning of summer break for breakfast. He also likes them for lunch, but only if he didn’t already eat one for breakfast. 🙂

Grilled BBQ Sandwich with Spicy Avocado Spread

When I told my husband we were having BBQ chicken sandwiches for dinner he asked me what the twist was…he knows me too well. You will enjoy the avocado “twist” that goes along with this.

Sandwich
Ingredients:
4 boneless skinless chicken breast cutlets
1/4 cup of your favorite BBQ sauce (we used more for dipping)
Cooking spray
4 slices of cheddar cheese
Lettuce and tomato slices for garnish
4 Whole wheat hamburger buns

Instructions:
Spray grill rack with cooking spray.

Preheat the grill.

Brush both sides of chicken with BBQ sauce. Grill for 4-5 minutes on each side or until chicken is done. Place one cheese slice on each chicken breast during the last minute of cooking.

Assemble sandwiches on buns with chicken, lettuce, tomato and spicy avocado spread. You might want to add a little more BBQ sauce to the chicken or even dip the sandwich in the BBQ sauce as you eat it. We did.

Spicy Avocado Spread
Ingredients:
1 ripe peeled avocado, coarsely mashed
1 T jalapeno pepper
1 T minced red onion
1 1/2 T lime juice
1 garlic clove, minced
2 T minced fresh cilantro

Instructions:
Combine all ingredients in a small bowl and mix well.

What did the family think? Everyone REALLY liked this. It was so good and it made me miss all of that Kansas City BBQ I am used to eating. The avocado spread made this sandwich extra special. Yummo! P.S. The kids didn’t eat the avocado spread, but they did eat the chicken sandwich with BBQ sauce. Our youngest even decided he REALLY likes BBQ sauce and used it for dipping his sandwich into. Who knew????

Chicken, Hummus and Roasted Red Pepper Wrap

These are super easy and super yummy and a great way to use leftover chicken.

Ingredients:
1 whole wheat tortilla
2 T hummus
1/2 c. shredded chicken
Roasted red peppers
Creamy caesar dressing
Lettuce

Instructions:
Spread hummus on tortilla. Top hummus with chicken, a few roasted red pepper strips, a little caesar dressing and garnish with lettuce.

So easy and great on a hot summer day.

Avocado Sandwich

So pure and simple it has to be good…

Ingredients:
1 avocado
1/2 lemon
Salt and pepper to taste
Bread

Instructions:
Cut, pit and peel an avocado. Put the “meat” of the avocado in a bowl. Mash up avocado until there are just a few chunks…you don’t want it too mushy. Squeeze the juice out of the lemon onto the avocado. Sprinkle with salt and pepper. Drizzle with a little olive oil. Stir. Spread on a piece of bread/toast and top with another piece of bread/toast. Enjoy!

I just had it with some really good bread that I toasted. That’s it…just toast and the avocado mixture. You may also want to have it with lettuce, tomato and mayonnaise. I have even seen a recipe to try it with a fried egg. I would have tried that if I’d had one.

What did the family think? I had this for lunch by myself and even if I could have shared with them I wouldn’t have. It’s too good to share. 🙂

Turkey Reuben Sandwiches

These are a healthier version of this deli favorite…

Ingredients:
2 T Dijon mustard
8 slices Rye bread
4 slices Swiss cheese
8 oz. thinly sliced smoked turkey
2/3 c. sauerkraut, drained and rinsed
1/4 c. Thousand Island dressing
1 T canola oil, DIVIDED

Directions:
Spread mustard evenly over each bread slice.

Place one slice of cheese on four of the bread slices.

Divide turkey evenly between the sandwiches. Place turkey on top of the cheese slices.

Divide sauerkraut evenly among the four bread slices with turkey and place sauerkraut on top of the turkey.

Top sauerkraut with 1 T of dressing. Spread dressing with a knife.

Top each with the remaining slices of bread, mustard side down.

Heat half of the canola oil in a large non-stick skillet over medium-high heat. Add 2 sandwiches to the pan; top with another heavy skillet (or whatever reasonable thing you can find in your kitchen that is heavy enough to smash the sandwiches down a bit).

Cook three minutes on each side or until golden.

Repeat with the remainder of the canola oil and remaining sandwiches.

What does the family think? Hubby and I love these. The boys like them if I only give them turkey and cheese.

Did I change anything? Usually I will skip the canola oil and put butter on the bread like I do when I am making a grilled cheese.

Mexican-Style Chicken Sandwiches

I broke out a cookbook I hadn’t used in years and found this yummy recipe.

Ingredients:
2/3 c. mayo
2 T fresh lime juice
Salt and pepper to taste
15 oz. can black beans, drained
1 1/2 tspn. ground cumin
4 French rolls, split horizontally, lightly toasted
2 boneless skinless chicken breasts, diced
3/4 tspn. cayenne pepper
1 T olive oil
4 slices hot pepper Monterey Jack cheese

2 medium tomatoes, sliced
1 avocado, peeled, pitted and sliced

Directions:
Whisk together mayo and lime juice in a small bowl. Season with salt and pepper.

Stir beans and cumin in a small skillet over medium heat until heated through. Using fork, mash beans in skillet to a coarse paste. Arrange toasted rolls on plates and spread bean mixture on 1/2 of each roll.

Heat olive oil in a skillet and add chicken. Sprinkle cayenne pepper over chicken as it cooks. When chicken is cooked through, top chicken with cheese slices, cover skillet, reduce heat and cook on low until cheese melts.

Place chicken on bean mixture. Top with tomato and avocado. Spread lime mayo on 1/2 of rolls that don’t have the beans on them, assemble and serve.

Did I change anything? The only think I changed was that I melted the cheese on the rolls while they were toasting in the oven instead of melting the cheese on the chicken in the skillet.

What did the family think? Hubby and I really liked these sandwiches. Our oldest wasn’t feeling well and went to bed so he didn’t eat dinner and SURPRISINGLY our youngest did eat it without much fuss. Once I removed the avocado and the tomatoes he ate it. I was so proud of him and it sure made dinnertime MUCH more enjoyable.

Homemade Sloppy Joes

It’s easier and faster to just open a can, but if you have a little time…

Ingredients:
1/2 yellow onion, chopped
1 green bell pepper, chopped
2 T garlic
2 tspn. olive oil
1 lb hamburger
2 tspn. chili powder
1 tspn. cumin
Salt and pepper to taste
1 small can tomato paste
1 T brown sugar
1/4 c. catsup
1/2 c. water

Directions:
In a large skillet saute olive oil, onion, green peppers and garlic on medium heat until soft.

Add hamburger and cook thoroughly. Drain fat.

Add the rest of the ingredients, stirring, and cook on low heat until mixture thickens. Enjoy!

We had these on toasted hamburger buns with some buttered corn and watermelon on the side. Some of us even put cheddar cheese on our sloppy joes which made them extra yummy.

What did the family think? I liked them, hubby did not. Oldest child liked them, youngest did not.

Did I do change anything? I followed the recipe as is, but the next time I make them I think I will leave out the cinnamon.
