Simple Crockpot Roasted Chicken

This is so simple and will be ready for you at dinnertime without you having to do much of anything…

Ingredients:
1 whole chicken (fryer or roasting)
Salt and pepper

Instructions:
Rinse and dry chicken both inside and out and make sure the gizzards, neck, etc. aren’t in the cavity of the chicken.

Place whole chicken in pot. Season with salt and pepper. Cover with lid.

Cook on High 60 minutes. After 60 minutes, put on Low.

Cook on Low for 6 – 8 more hours.

We had this with pierogies and some pineapple.

Did I change anything? The recipe didn’t give exact amounts for the salt and pepper so I didn’t use a lot of salt (1 tsp maybe) but I was pretty liberal with the pepper (3 tsp maybe). You be the judge and season accordingly. It also depends on if you are using sea salt/table salt and how coarse your pepper is.

What did the family think? Everyone loved the chicken. I have made several variations of this over the years and it is a great one to make because I know everyone will eat it and it is so easy.

Orange Grilled Salmon

This is a great dish…a little bit citrusy and a little bit sweet.

Ingredients:
1 lb. salmon
2 oranges
1/4-1/2 cup brown sugar (depending on how sweet you want it)
Salt

Instructions:
Place salmon skin side down on a large piece of aluminum foil.

Squeeze one orange over the top then sprinkle generously with the brown sugar and salt.

Cut the second orange into slices and layer over the top.

Completely cover with the aluminum foil and seal then grill on medium heat until fully cooked.

What did the family think? Hubby and I both liked it, but he thought it needed some tartar sauce for dipping, but he always thinks that about any fish dish.

Nutella Waffle Bits

A smaller version of a recipe that’s in Food Network’s magazine this week….bite-sized yumminess.

Ingredients:
Mini-waffles
Nutella
Strawberries, thinly sliced (optional)
Cocoa powder (optional)

Instructions:
Toast waffles and let cool.

Spread Nutella on one waffle and place a strawberry slice on top. Top with a second waffle to make a sandwich. Dust with cocoa powder. Enjoy!

What did the family think? We tried these both with and without strawberries and they are both great!

Itty Bitty Pies

Several, several years ago I made these with my nieces at Christmas. I hadn’t made them since and I have no idea why because they are ridiculously easy and crazy good.

Ingredients:
Cooking Spray
Your choice of pie filling (apple and cherry are what we’ve tried)
Pillsbury refrigerated pie crusts…the kind you roll out

Instructions:
Preheat oven to 425 degrees.

Spray cookie sheet with cooking oil.

Let pie crust sit out for about five minutes before unrolling. You will use both crusts that are in the package.

Unroll pie crusts and use a wide-mouth glass to cut circles out. I use the Pampered Chef circle cutter, so you use that if you have one of those.

You should have about 12 circles when you are done depending on how big your circles are and how close together you cut them out.

Lay out one circle and put a dollop of pie filling in the center and cover with another circle. Use a fork to press edges together. Continue until you have used all your circles. If you have one circle left over you can put a little filling in it and just fold it in half.

Place pies on the cookie sheet and bake for 5-7 minutes or until they start to get golden brown.

Mini Waffle Ice Cream Sandwiches

I got this idea from this month’s Food Network magazine. They used the big waffles, but I thought that seemed like a little too much dessert and way too messy. Plus, if you use the little waffles you can have more than one and try a different ice cream flavor in each one.

Ingredients:
Mini waffles
Ice cream

Instructions:
Toast the waffles and let cool.

Scoop ice cream onto one waffle and top with another waffle. Voila! Dessert!

Baked BBQ Salmon

This is an easy salmon recipe that I came up with one day when I was trying to cook salmon in a way that did not involve Mrs. Dash.

Ingredients:
1 1/2 lbs. salmon
Your favorite BBQ sauce

Instructions:
Preheat oven to 350 degrees.

Place salmon in a glass dish and bake for about five minutes. Take out of oven and brush liberally with BBQ sauce. Cook for another 5-10 minutes until fish flakes with a fork.

We usually have this with BBQ baked beans, cole slaw and/or macaroni salad…what I like to call picnic sides.

What does the family think? This is one of my favorite ways to make salmon. It’s easy, it tastes good and it’s almost impossible to mess up. 🙂

Poached Salmon

This would make an easy dish for Lent or anytime.

Ingredients:
1 to 1½ pounds salmon fillets
½ cup dry white wine (a good Sauvignon Blanc)
½ cup water
A few thin slices of yellow onion and/or 1 shallot, peeled and sliced thin
Several sprigs of fresh dill or sprinkle of dried dill
Freshly ground black pepper

Instructions:
Put wine, water, dill, parsley and onions in a saute pan, and bring to a simmer on medium heat.

Place salmon fillets, skin-side down on the pan. Cover. Cook 5-10 minutes or to desired done-ness. Do not overcook.

Serve sprinkled with freshly ground black pepper.

We had this with a salad and a baguette. (Yes, we eat a lot of baguettes around here.) 🙂

What did the family think? It was good. Next time I will make sure to place some of the shallots on top of the salmon when serving it. The boys had fish sticks.

Salmon Steaks with Hoisin Sauce

This is an easy and flavorful salmon dish. If you are starting to think about dishes for Lent, this would be a good one.

Ingredients:
1 tablespoon orange juice
2 tablespoons hoisin sauce
2 teaspoons honey
Coarse salt and ground pepper
4 salmon steaks (8 to 10 ounces each), 1 inch thick

Instructions:
Heat broiler. In a glass measuring cup, whisk together orange juice, hoisin sauce, and honey.

Place salmon on a rimmed baking sheet. Season with salt and pepper. Brush half of the hoisin sauce mixture over to coat.

Broil salmon about 4 inches from the heat source, basting once, until opaque in center, 10 to 13 minutes.

We had this with Sauteed Bok Choy and Broccoli (which was good) and some potstickers I bought from the frozen food aisle (which were terrible).

What did the family think? This was a quick, easy and tasty recipe. Hubby and I liked it, but watch out for the bones.

Cilantro Rice

A quick and easy side dish that gives your rice a little zip.

Ingredients:
Minute Rice (either brown or white)
1 cup cilantro, chopped
2 green onions, chopped

Instructions:
Cook rice per directions for six servings. When the rice is done stir in the cilantro and green onions.

What did the family think? Hubby and I liked it. It went well with the chicken dish we were having. I am not sure the kids touched it, but we were in a hurry to get out the door, so I didn’t hound them about trying it.

Simple Salmon Fillets

These are very easy, quick and good for you, too.

Ingredients:
2 (6-ounce) coho salmon fillets, 1 1/8 to 1 1/4 inches thick, pin bones removed
2 teaspoons vegetable oil
1/4 teaspoon kosher salt
Freshly ground black pepper

Instructions:
Set a 10-inch nonstick saute pan over medium heat. Brush each fillet with the oil and sprinkle with kosher salt and black pepper.

Place the fillets in the pan flesh side down. Cook for 2 minutes. Turn each fillet over and continue to cook for another 2 minutes.

Transfer the fillets to a plate, cover loosely with foil, and allow to rest for 5 minutes before serving.

We had this with roasted broccoli and a baguette.

Did I change anything? I had to cook it quite a but longer than the recipe suggests. Maybe my salmon was thicker?

What did the family think? Hubby and I liked it…we are the only salmon eaters in our house.
