Lemon Garlic Salmon

This is probably one of the best salmon dishes I have ever made…the salmon was moist and very flavorful.

Ingredients:
2 tablespoons unsalted butter
2 teaspoons minced garlic
1 teaspoon lemon pepper
2 (4 ounce) fillets salmon
1 lemon

Instructions:
Season salmon fillets on both sides with lemon pepper.

In a large skillet, melt butter over medium high heat. Stir in garlic. Place salmon in pan.

Cook for 10 minutes per inch of thickness, or until fish flakes when tested with a fork. Flip fillets halfway through cooking to brown on both sides.

Sprinkle with lemon juice before serving.

Did I change anything? I completely forgot the lemon juice. I had the lemon…just forgot to use it.

What did the family think? There was high drama at dinner that night, but not over the salmon. The salmon was lovely, the 6-year old was not…apparently he felt that his fish sticks were “squished” and that his brother should trade with him because his brother’s fish sticks were not “squished”. I assure you that his fish sticks were totally fine and that he just needed to go to bed and sleep it off.

Grilled Fish Steaks

Okay, let me just say that you might want to try this with another type of fish. As yummy as the halibut was, it took me a few hours after we got home to realize how much the halibut cost. Dang! So that’s why our grocery bill was so high.

Ingredients:
1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
2 (6 ounce) fillets halibut

Instructions:
In a stainless steel or glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.

Place the halibut filets in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.

Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.

Remove halibut filets from marinade and drain off the excess. Grill filets 5 minutes per side or until fish is done when easily flaked with a fork.

We had this with salad, a baguette and a fruit salad.

What did the family think? Hubby and I liked it. I finally bought the stuff to make tartar sauce (mayo, relish and a lemon) so hubby was very happy. 🙂

Orange Grilled Salmon

This is a great dish…a little bit citrusy and a little bit sweet.

Ingredients:
1 lb. salmon
2 oranges
1/4-1/2 cup brown sugar (depending on how sweet you want it)
Salt

Instructions:
Place salmon skin side down on a large piece of aluminum foil.

Squeeze one orange over the top then sprinkle generously with the brown sugar and salt.

Cut the second orange into slices and layer over the top.

Completely cover with the aluminum foil and seal then grill on medium heat until fully cooked.

What did the family think? Hubby and I both liked it, but he thought it needed some tartar sauce for dipping, but he always thinks that about any fish dish.

Baked BBQ Salmon

This is an easy salmon recipe that I came up with one day when I was trying to cook salmon in a way that did not involve Mrs. Dash.

Ingredients:
1 1/2 lbs. salmon
Your favorite BBQ sauce

Instructions:
Preheat oven to 350 degrees.

Place salmon in a glass dish and bake for about five minutes. Take out of oven and brush liberally with BBQ sauce. Cook for another 5-10 minutes until fish flakes with a fork.

We usually have this with BBQ baked beans, cole slaw and/or macaroni salad…what I like to call picnic sides.

What does the family think? This is one of my favorite ways to make salmon. It’s easy, it tastes good and it’s almost impossible to mess up. 🙂

Poached Salmon

This would make an easy dish for Lent or anytime.

Ingredients:
1 to 1½ pounds salmon fillets
½ cup dry white wine (a good Sauvignon Blanc)
½ cup water
A few thin slices of yellow onion and/or 1 shallot, peeled and sliced thin
Several sprigs of fresh dill or sprinkle of dried dill
Freshly ground black pepper

Instructions:
Put wine, water, dill, parsley and onions in a saute pan, and bring to a simmer on medium heat.

Place salmon fillets, skin-side down on the pan. Cover. Cook 5-10 minutes or to desired done-ness. Do not overcook.

Serve sprinkled with freshly ground black pepper.

We had this with a salad and a baguette. (Yes, we eat a lot of baguettes around here.) 🙂

What did the family think? It was good. Next time I will make sure to place some of the shallots on top of the salmon when serving it. The boys had fish sticks.

Spanish Quiche

My boys love eggs and cheese, so I thought this quiche might be a hit with them.

Ingredients:
3 flour tortillas
16 oz. refried beans
4 oz. diced chiles
1/2 cup green onion, chopped
4 oz. grated cheddar cheese
1 3/4 cups egg substitute or seven eggs, scrambled
1/4 cup milk
1/4 lb. ground chorizo (optional)

Instructions:
Preheat oven to 350 degrees.

Spray a 9-inch pie pan with cooking spray.

If using chorizo, cook in a medium-sized skillet. Using a wooden spoon to crumble.

Cut two tortillas in half and place each half in the pan so that the rounded edge is 1/4 inch above the rim. Place the third tortilla in the center of the pan.

Spread beans over tortillas. (I only used about 1/3 of the beans.)

Top with chiles, onions and cheese. Mix eggs with milk and pour over the top. Put chorizo on top if you are using it.

Bake for 50 minutes or until knife inserted in the center come out clean. Let it sit for 10 minutes before cutting into wedges.

We had this with refried beans and fruit salad.

Did I change anything? I added the chorizo. I didn’t use all the beans in the quiche and I used about 1/2 the onions.

What did the family think? Whew! That chorizo was SPICY! Which is exactly why hubby and I liked it and the boys did not. Our youngest likes spicy, but this was a little much. Since the chorizo was on top, I just had them flip their quiche over and eat it from the bottom until they hit the chorizo part.

Baked Ravioli

This was SO good…just about everyone was asking for seconds.

Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
Coarse salt and ground pepper
1 1/2 teaspoons dried thyme, oregano or Italian seasoning
1 can (28 ounces) whole tomatoes with basil
1 can (28 ounces) crushed tomatoes with basil
2 pounds store-bought ravioli
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese

Instructions:
Preheat oven to 425 degrees.

Heat oil in a large saucepan over medium heat. Add onion and garlic, and season with salt and pepper; cook, stirring occasionally, until softened, about 5 minutes. Add thyme and tomatoes. Bring to a boil, reduce heat, and simmer, breaking up tomatoes with spoon, until sauce is thickened and reduced to about 5 1/2 cups, 20 to 25 minutes.

Meanwhile, cook ravioli in a large pot of boiling salted water just until they float to the top (pasta will continue to cook in oven). Drain pasta; return to pot.

Toss sauce with pasta. Pour pasta into a large gratin dish or 9-by-13-inch baking dish, and sprinkle with cheeses. Bake until golden, 20 to 25 minutes. Cool slightly before serving.

We had this with Italian sausage links on the side.

Did I change anything? I used the canned tomatoes that have basil in them. I left out the salt and pepper and I used about 1/2 as much onion as listed.

What did the family think? Everyone LOVED this!

Salmon Steaks with Hoisin Sauce

This is an easy and flavorful salmon dish. If you are starting to think about dishes for Lent, this would be a good one.

Ingredients:
1 tablespoon orange juice
2 tablespoons hoisin sauce
2 teaspoons honey
Coarse salt and ground pepper
4 salmon steaks (8 to 10 ounces each), 1 inch thick

Instructions:
Heat broiler. In a glass measuring cup, whisk together orange juice, hoisin sauce, and honey.

Place salmon on a rimmed baking sheet. Season with salt and pepper. Brush half of the hoisin sauce mixture over to coat.

Broil salmon about 4 inches from the heat source, basting once, until opaque in center, 10 to 13 minutes.

We had this with Sauteed Bok Choy and Broccoli (which was good) and some potstickers I bought from the frozen food aisle (which were terrible).

What did the family think? This was a quick, easy and tasty recipe. Hubby and I liked it, but watch out for the bones.

Simple Salmon Fillets

These are very easy, quick and good for you, too.

Ingredients:
2 (6-ounce) coho salmon fillets, 1 1/8 to 1 1/4 inches thick, pin bones removed
2 teaspoons vegetable oil
1/4 teaspoon kosher salt
Freshly ground black pepper

Instructions:
Set a 10-inch nonstick saute pan over medium heat. Brush each fillet with the oil and sprinkle with kosher salt and black pepper.

Place the fillets in the pan flesh side down. Cook for 2 minutes. Turn each fillet over and continue to cook for another 2 minutes.

Transfer the fillets to a plate, cover loosely with foil, and allow to rest for 5 minutes before serving.

We had this with roasted broccoli and a baguette.

Did I change anything? I had to cook it quite a but longer than the recipe suggests. Maybe my salmon was thicker?

What did the family think? Hubby and I liked it…we are the only salmon eaters in our house.

Spaghetti Frittata

My kids like spaghetti and they like eggs, so I thought I would give this a try.

Ingredients:
1 tbsp butter or olive oil
2-3 cloves garlic, minced
1/2 lb. ground Italian sausage (optional)
1 14-ounce can Italian-style diced tomatoes, lightly drained
Smidge of crushed red pepper
Salt and pepper to taste (I used sea salt)
6 eggs, beaten
Leftover pasta–about 6 ounces worth (I didn’t have any leftover so I just made some.)
1 Tablespoon chopped fresh basil, if you have it
Parmesan

Instructions:
Preheat broiler and make sure you are using an oven-proof skillet.

Heat butter or oil in a large skillet. Add garlic and sauté about 30 seconds (never brown garlic). Add the Italian sausage and cook until done.

Add tomatoes with about half their juice, season with salt, pepper, and crushed red pepper. Simmer for about 5-8 minutes, stirring occasionally, until tomatoes have broken down some and juice is reduced.

Add pasta and stir to coat. Give it a minute or two to heat through, then reduce heat to low and pour beaten eggs over. Quickly stir things around so you have a somewhat even distribution of egg and pasta.

Sprinkle with parmesan and chopped basil, then just let it heat slowly so the eggs can cook without scorching.

When the eggs have mostly set, stick the whole thing under the broiler to finish cooking.

Cut into wedges and serve!

We had this with a salad.

Did I change anything? The recipe called for just regular diced tomatoes, but I used the Italian-style ones for more zip. I also added the Italian sausage.

What did the family think? Thumbs up from everyone! I love it when that happens. 🙂
