Breakfast Casserole

Super yummy, should have just waited to make it on a cooler day or when we have air conditioning though…no we don’t have AC, but we are getting it this week. Yipppeeee!!!!

Ingredients:
8 eggs, beaten
2 1/2 cups cheddar cheese
6 slices of bread, ripped into cube-like pieces
2 cups milk
2 Italian sausage links, casings removed, cooked and crumbled
1 cup fresh spinach, chopped

Instructions:
Preheat oven 350 degrees.

Beat the eggs in a large bowl. Stir in the milk and cheese. Add the bread and stir it in carefully so it doesn’t disintegrate. Add cooked sausage and spinach. Stir again. Butter a 13 x 9-inch casserole dish. Pour mix into casserole dish.

Bake for 50-60 minutes. Watch it those last ten minutes so that it doesn’t get too done on top.

Let cool for ten minutes before serving.

We had this with a simple salad and a baguette. (Yes, we eat a lot of baguettes around here.) 🙂

Did I change anything? I used leftover hamburger buns instead of bread. This is a great dish to add whatever you happen to have on hand. I could have added broccoli or corn or bacon or onions…The dish not only tasted great, but it was kind of pretty with the green spinach sprinkled in there.

What did the family think? Everyone loved it. Hubby and I had seconds. Oink! 🙂

Fresh Blueberry Sauce

This is a very tasty and very versatile sauce and a great way to use some of those summer blueberries…

Ingredients:
2 cups fresh blueberries
1/3 cup sugar
1 T fresh lemon juice
1/4 tsp. salt
1/2 tsp. vanilla
Pinch of cinnamon

Instructions:
Wash blueberries, place in pan and crush them with the back of a spoon. Add sugar, lemon juice and salt to pan, mix well and bring blueberry mixture to a boil. Boil for one minute. Add vanilla and cinnamon, chill and serve over ice cream, waffles or pancakes.

What did the family think? Our oldest and I LOVE this is. It is so yummy and so easy to make. We first had it as a sample at our grocery store. Our favorite way to eat it is mixed with just a little bit of vanilla yogurt and then using a graham cracker to spoon it into our mouths. Summer goodness!

Puff Up Pancakes

You know that look people get on their faces when they bite into something they have never tasted before and it turns out to be a little taste of heaven in their mouths? That’s the face our boys made this morning when they ate this. Wowzer…so good!

Ingredients:
1/4 cup butter
5 eggs
1 1/4 cup flour
1 1/4 cup milk
1 tspn. vanilla

Instructions:
Melt butter in a 9×13-inch pan in oven while oven is preheating to 425 degrees.

Mix eggs, flour, milk and vanilla with wire wisk.

When butter is melted and oven is ready, add batter to 9 x 13 pan and bake for 20-25 minutes.

Serve with butter and maple syrup or maybe fresh fruit and powdered sugar.

What did the family think? Too good for words.

This is a fun recipe to make because it puffs UP. Our boys thought it was pretty cool how puffed up it got. That said, make sure you put it on a middle or lower rack in your oven.

Grits and Sausage Casserole

Never had grits? This would be a great place to start…

Ingredients:
1/2 lb. turkey breakfast sausage
1 1/2 c. milk
1 1/2 c. water
3/4 c. quick-cooking grits
3/4 c. cheddar cheese, shredded
1/4 tspn. garlic powder
Salt and pepper to taste
Dash of ground red pepper
3 egg whites
Cooking spray

Instructions:
Preheat over to 375 degrees.

Cook sausage in a skillet until browned, stirring to crumble. Drain and set aside.

Combine milk and water in a saucepan and bring to boil over medium-high heat. Stir in grits, cover, reduce heat and simmer for 7 minutes or until thick, stirring frequently.

Combine grits, sausage, cheese, salt, pepper and garlic in a bowl and set aside.

Beat eggs whites on a high until stiff peaks form. Gently stir 1/4 of egg whites into grit mixture. Gently fold in remaining egg whites.

Spoon mixture into a casserole dish that has been coated with cooking spray. Bake at 375 degrees for 25 minutes or until lightly browned.

What did the family think? Hubby and I love this dish. It is a great way to have breakfast for dinner. 🙂

Cheesy Brunch Casserole

Breakfast for dinner, anyone?

Ingredients:
1 lb. turkey Italian sausage
5 cups herbed seasoned stuffing mix
Cooking spray
1/2 c. chicken broth
2 T. butter, melted
6 oz. sharp cheddar cheese
2 c. milk
1/2 tspn. black pepper
16 oz. egg substitute

Directions:
Preheat oven to 325 degrees.

Remove casings from sausage and cook sausage in a large skillet over medium-high heat until browned, stirring to crumble. Drain.

In a large bowl, combine stuffing and sausage and mix well.

Place stuffing mixture in a 13 x 9 casserole dish coated with cooking spray.

Drizzle stuffing mixture with broth and butter. Sprinkle with cheese.

Combine milk, pepper and egg substitute, stirring with a whisk. Pour milk mixture over stuffing mixture.

Bake 40 minutes at 325 degrees. Let stand five minutes before serving.

What did the family think? I made this for a Mother’s Day brunch and it was a hit with everyone.
