Crock Pot Sour Cream Pork Chops

When LeeAnn over at Living the Dream posted this I thought it might be a good recipe for our family, especially during our busy baseball season…the slow cooker is my friend these days. My kids love egg noodles and they usually like just about anything that has sour cream in it, so I thought I would give it a try.

Ingredients:
6 pork chops
salt and pepper to taste
garlic powder to taste
1/2 cup all-purpose flour
1/4 to 1/2 onion, sliced
2 cups chicken broth
1/4 to 1/2 cup dry white wine
2 tablespoons all-purpose flour
1 cup sour cream
8 oz. egg noodles

Instructions:
Season pork chops with salt, pepper, and garlic powder, and then dredge in 1/2 cup flour. In a skillet over medium heat, lightly brown chops in a small amount of oil.

Place chops in slow cooker, and top with onion. Carefully pour broth into browing pan to deglaze. Pour broth over chops and add the wine. Cover, and cook on Low 7 to 8 hours.

After the chops have cooked, transfer chops to a plate. Be careful, the chops are so tender they will fall apart. In a small bowl, blend 2 tablespoons flour with the sour cream; whisk into meat juices.

Put chops back into slow cooker and turn to High for 15 to 30 minutes, or until sauce is slightly thickened.

While the pork chops are back in the slow cooker for the last 15-30 minutes, cook egg noodles according to package directions.

Serve pork chops and sauce over the egg noodles.

We had this with a banana and strawberry fruit salad and a green salad.

Did I change anything? The only thing I changed is that I only used four pork chops since I knew there was no way we were going to eat all six. I also thought some mushrooms might be good in this, but no one eats mushrooms in this house but me.

What did the family think? There was zero complaining at the table. Everyone liked it!

Crockpot Country (Hamburger) Lentil Soup

Hubby found this recipe and thought it would be good on baseball nights since when the boys have a game we don’t get home until pretty late. He was right…it was perfect after we got home from sitting through a pretty chilly baseball game…it was warm and it was ready to eat. This could also easily be made without the hamburger too if you are looking for a vegetarian option.

Ingredients:
1 cup dried lentils
1 (28 ounce) can diced tomatoes
8 ounces lean ground beef, turkey or chicken (browned)
3 ounces celery, thinly sliced (3 stalks)
3 ounces baby carrots, thinly slieced (good-sized handful)
1/2 small onion, diced
2 garlic cloves, minced
3 cups broth (I used chicken broth.)
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 -2 bay leaves

Instructions:
Brown ground beef.

Combine all ingredients in 4-5qt crock pot.

Cook on low at least 10 hours or high for 6 hours.

Remove bay leaves before serving.

What did the family think? The boys didn’t eat this since I fed them early because of the baseball game (and because I knew they wouldn’t like this…the only soup they like is miso soup and an occasional chicken noodle). Hubby and I liked it though and it was nice after sitting in the cold for two hours.

Simple Crockpot Roasted Chicken

This is so simple and will be ready for you at dinnertime without you having to do much of anything…

Ingredients:
1 whole chicken (fryer or roasting)
Salt and pepper

Instructions:
Rinse and dry chicken both inside and out and make sure the gizzards, neck, etc. aren’t in the cavity of the chicken.

Place whole chicken in pot. Season with salt and pepper. Cover with lid.

Cook on High 60 minutes. After 60 minutes, put on Low.

Cook on Low for 6 – 8 more hours.

We had this with pierogies and some pineapple.

Did I change anything? The recipe didn’t give exact amounts for the salt and pepper so I didn’t use a lot of salt (1 tsp maybe) but I was pretty liberal with the pepper (3 tsp maybe). You be the judge and season accordingly. It also depends on if you are using sea salt/table salt and how coarse your pepper is.

What did the family think? Everyone loved the chicken. I have made several variations of this over the years and it is a great one to make because I know everyone will eat it and it is so easy.

Grilled Fish Steaks

Okay, let me just say that you might want to try this with another type of fish. As yummy as the halibut was, it took me a few hours after we got home to realize how much the halibut cost. Dang! So that’s why our grocery bill was so high.

Ingredients:
1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
2 (6 ounce) fillets halibut

Instructions:
In a stainless steel or glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.

Place the halibut filets in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.

Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.

Remove halibut filets from marinade and drain off the excess. Grill filets 5 minutes per side or until fish is done when easily flaked with a fork.

We had this with salad, a baguette and a fruit salad.

What did the family think? Hubby and I liked it. I finally bought the stuff to make tartar sauce (mayo, relish and a lemon) so hubby was very happy. 🙂

Enchiladas with Spicy Pumpkin Sauce

This was a great dish to assemble ahead of time and then pop in the oven when we got home.

Ingredients:
2 chicken breasts, boiled and shredded
6 scallions, thinly sliced
Coarse salt and ground pepper
1 can (15 ounces) pumpkin puree
4 cloves garlic, peeled
1 jalapeno chile, quartered (remove ribs and seeds for less heat, if desired)
1 teaspoon chili powder
8 corn tortillas (6-inch)
1 1/2 cups grated sharp cheddar cheese (6 ounces)

Instructions:
Preheat oven to 425 degrees. In a medium bowl, combine chicken and scallions. Season generously with salt and pepper; set aside.

In a blender, puree pumpkin, garlic, jalapeno, chili powder, 2 1/2 cups water, 2 teaspoons salt, and 1/4 teaspoon pepper until smooth (hold top firmly as blender will be quite full).

Pour 1 cup of sauce in the bottom of an 8-inch square (or other shallow 2-quart) baking dish. Pour 1/2 cup enchilada sauce into chicken mixture and stir to combine.

Lay tortillas on work surface; mound chicken mixture on half of each tortilla, dividing evenly. Roll up tortillas; place, seam side down, in baking dish.

Pour remaining sauce on top; sprinkle with cheese. Place dish on a baking sheet; bake until cheese is golden and sauce is bubbling, 25 to 30 minutes. Let cool 5 minutes before serving.

Did I change anything? I added a little of the enchilada sauce to the chicken so the chicken wouldn’t be so plain (I changed the recipe above to reflect that.) and I would also add a little more of the jalepeno to the sauce…it wasn’t spicy enough for me.

What did the family think? Hubby wasn’t too thrilled. He wanted more traditional enchiladas. I liked it, but wanted it to be spicier, but the lack of spice is exactly why our boys ate it. Our youngest picked out the chicken and dipped it in salsa.

Slow Cooker Chicken Enchilada Chili

It’s definitely still the time of year for warm and cozy comfort foods…

Ingredients:
1 1/2 pounds boneless skinless chicken breasts
1 1/2 cups prepared enchilada sauce
2 chopped celery stalks
2 (14.5 oz) cans olive oil and garlic diced tomatoes (or some other “flavor” if you can’t find those)
2 (15 oz) cans pinto or kidney beans, undrained
1 onion, diced (or 1 tablespoon dried, minced onion flakes)
1-2 teaspoons chili powder
1 teaspoon cumin
Sour cream and shredded cheddar cheese for garnish

Instructions:
Pour enchilada sauce and canned tomatoes into the bottom of a 6 quart slow cooker. Add beans, celery, onion and spices. Stir to combine. Place chicken on top.

Cover and cook on low for 7-8 hours, or until flavors have combined. Shred chicken and stir back into slow cooker.

Serve with shredded cheddar cheese and a dollop of sour cream, if desired.

Did I change anything? I didn’t use as much onion, maybe half as much as the recipe called for and I left out the celery.

What did the family think? Hubby and I LOVED this! The boys aren’t huge enchilada fans, but they will pick out the chicken and eat that.

CrockPot BBQ Brisket Sandwiches

Your house will smell SO good all day long while this is cooking!

Ingredients:
5 tablespoons dark brown sugar, divided
3/4 teaspoon black pepper
1 lb. brisket
1 cup chopped onion
1 cup tomato paste
3 tablespoons Worcestershire sauce
3 tablespoons molasses
3 tablespoons cider vinegar
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon ground cumin
1/2 teaspoon salt
10 (2 1/2-ounce) submarine rolls, halved
Red onion slices (optional)
Dill pickle slices (optional)

Instructions:
Combine 1 tablespoon brown sugar and pepper; rub over both sides of brisket.

Combine 1/4 cup brown sugar, onion, and next 9 ingredients (onion through salt) in an electric slow cooker. Add brisket; turn to coat.

Cover with lid; cook on high-heat setting for 1 hour. Reduce heat setting to low; cook for 7 hours.

Remove brisket; reserve sauce. Shred brisket with 2 forks. Return shredded brisket to cooker; stir into sauce. Spoon 1/2 cup brisket mixture onto bottom half of each roll; top with onion and pickles, if desired. Cover with tops of rolls.

We had this with cole slaw and dill pickles on the side.

Did I change anything? I only used 1/2 the onion.

What did the family think? After the children realized that they weren’t going to die from eating BBQ they ate it and I think it would be safe to say that they liked it. Hubby and I thought it was scrumptious.

Santa Maria Chicken

Some friends from church had us over for dinner a few weeks ago and this chicken was so good I had to ask for the recipe. The kids liked it so much that is was almost embarrassing how much they ate. It is so easy, too…four ingredients…it doesn’t get much easier than that.

Ingredients:
4 boneless, skinless chicken breasts
1/2 cup catsup
1/2 cup olive oil
1/2 cup soy sauce

Instructions:
Put all ingredients in a Ziploc bag and marinate for at least four hours.

When you are ready to cook it, heat up grill to medium-high. Throw out marinade and cook chicken on grill until cooked through.

We had this will salad, bread and butter and corn.

What did the family think? Like I said before, the kids ate so much of this at their house that I was embarrassed. I was kind of worried that mine wouldn’t turn out right, but it did and they ate it right up.

Super Easy Crock Pot French Dip Sammies

My very dear friend, Candy, posted this on Facebook not too long ago and I thought I would give it a try. I had a feeling the boys would like it and I like anything that’s easy that involves provolone cheese.

Ingredients:
3-4 lbs beef brisket (use more or less depending on your family’s appetite)
1 can beef broth
1 packet of Lipton Beefy Onion Soup Mix
yellow or white onion, cut in wedges (totally optional–the flavor of the beef comes out just as good without this)
Italian Seasoning (totally optional, again)
Sliced bread, hoagie rolls, or other “bun” of choice
Provolone cheese (totally optional, again)

Instructions:
Spray inside of crock pot with nonstick cooking spray.

Take the Italian Seasoning (if you are using it) and sprinkle on all sides of the beef.

Place beef (fat side down) in crock pot.

Add onions, if you are using them.

Mix beef broth and soup mix by whisking a few times in a bowl.

Pour the combined beef broth/soup mix into crockpot with beef (& onions).

Cook on LOW setting for 8 hours or HIGH for 4-6 hours. (This is much better when cooked SLOW and long rather than on high and for shorter amount of time, but I have done both. If you’re in a pinch for time, then go with the HIGH setting if you must!)

Once beef is done, simply slice or shred up, place in bread or bun of choice, top with cheese (we have also used shredded cheddar and have omitted cheese completely and it’s been fine!).

Ladle out au jus sauce from crock pot and put in a small bowl for each person.
Dip sandwich to your liking, eat, and enjoy!

Did I change anything? I left out the onions and I couldn’t find the exact right flavor of Lipton soup mix at the grocery store, so I used Beef and Mushroom instead.

What did the family think? Hubby was out of town, so he missed out. Our oldest loved it and so did I. Our youngest really liked it too, but he decided to dip his in catsup instead of au jus.

Buttermilk Southwestern Grilled Chicken or Fish

I had some buttermilk in my frig that was going to go bad. This sounded pretty good and would use up most of my buttermilk, so I thought I would give it a try. One thing I liked about this recipe right off the bat is the marinade can be used for chicken and fish. Also, this has to marinate for a while so plan accordingly. 🙂

Ingredients:
2 cups buttermilk
1 lime, zested and juiced
3 cloves garlic, chopped
2 tablespoons ancho chili powder (or any pure chili powder)
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon turmeric
Hot sauce, to taste (recommended: Tabasco)
1/4 cup coarsely chopped fresh cilantro leaves
Salt and freshly ground black pepper
4 bone-in or boneless chicken breasts (each about 6 to 8 ounces)
Canola oil

Instructions:
Whisk together the buttermilk, lime zest and juice, garlic, chili powder, coriander, cumin, turmeric, hot sauce, cilantro, and salt and pepper, to taste, in a large bowl.

Pour the marinade into a large resealable plastic bag, add the chicken, seal the bag and refrigerate. Marinate bone-in chicken up to 12 hours, boneless up to 4 hours, chicken legs or breasts, up to 24 hours. If using fish, marinate white fish such as snapper, halibut or bass up to 30 minutes.

Preheat the grill pan over medium-low heat for boneless breasts and fish, and medium heat for bone-in breasts, thighs and legs.

Remove the meat/fish from the marinade and pat dry with paper towels.

Brush with oil and season with salt and pepper, to taste, on both sides. Grill until golden brown and charred on both sides and just cooked through.

Cook’s Note:

This recipe also includes the method for fish.

Boneless chicken breasts: about 9 minutes total

Chicken thighs/legs: about 20 minutes total

Bone-in chicken breasts: about 15 minutes total

White Fish: about 8 minutes total

We had this with cole slaw and some biscuits.

Did I change anything? No, I just used boneless chicken breasts.

What did the family think? I am not a huge fan of grilled anything, but hubby and the kids really liked it. Our youngest didn’t even ask for catsup with his chicken which I thought was weird. He ALWAYS has catsup with his chicken…even if the chicken is in soup or a casserole. He will almost always dig the chicken out and dip it in the catsup…not with this one though.
