Butterscotch Cornflake Cookies

These are SUPER easy and taste SO good!

Ingredients:
1 package butterscotch chips (11 oz.)
3/4 cup dry-roasted salted peanuts
3 cups corn flakes cereal

Instructions:
Melt the butterscotch chips in a large microwaveable bowl for about 90 seconds or until chips are melted.

Pour in peanuts and cereal and stir until everything is coated with butterscotch.

Line countertops with wax or parchment paper. Drop spoonfuls of mixture onto wax/parchment paper and let cool for about 15 minutes.

What did the family think? Everyone is our house who likes butterscotch thought these were SUPER yum and the kids had fun helping me make them.

Scrambled Egg and Cheddar Cheese Panini

SInce my kids seem to think sandwiches are better when they come out of the panini maker…

Ingredients:
2 slices Italian Sandwich Bread or English Muffin
3 eggs, scrambled
1 slice Cheddar Cheese (or whatever variety you prefer)

Instructions:
Scramble the eggs and put them with the cheese in between the two slices of bread.

If you have a panini maker, use it. If not, heat a skillet over medium low heat and spray with cooking spray. Place sandwich in skillet and put a heavy skillet on top of it for a few minutes. Flip the sandwich over, place the skillet on top of it again and cook for a few minutes on that side.

What does the family think? They think it’s so much better to have a panini than a grilled cheese. Isn’t this essentially a grilled cheese with some eggs thrown in there? Even if I give them a choice between a grilled cheese and a cheese panini, they will always pick the panini! Silly kids. 🙂

Roasted Butternut Squash

I love Trader Joe’s! They have pre-packaged already chopped up squash, so all I had to do was add some olive oil, salt and pepper and throw it in the oven. Voila!

Ingredients:
1 butternut squash
extra virgin olive oil, for drizzling
salt
freshly ground black pepper
2 teaspoons finely chopped fresh herbs like thyme, rosemary, or sage, (optional)
honey or maple syrup, for drizzling (optional)

Instructions:
Preheat the oven to 425°F.
Slice the stem off of the top of the squash and remove the bottom. With a strong vegetable peeler, remove and discard the squash’s skin.

Cut the squash in half down the middle. Remove and discard the seeds.

Slice the flesh into 1/4-inch dice and place on a baking sheet lined with foil.

Liberally drizzle with olive oil and season with salt. If desired, sprinkle with the herbs and drizzle with the honey or syrup. Toss to combine.

Roast for about 15-20 minutes.

We had this with fish and a fruit salad.

Did I change anything? I didn’t add any of the optional ingredients. We just had it with olive oil, salt and pepper.

What did the family think? Hubby and I really liked it. Our oldest liked the pieces that hadn’t gotten too mushy. (Some of the pieces were smaller than others, thus they cooked faster.) Our youngest had a bite or two.

Haricots Verts with Shaved Parmesan

In an attempt to get my children to eat some greens other than salad…

Ingredients:
3/4 pound ready-to-cook haricots verts
2 tablespoons sour cream
1 teaspoon lemon juice
1/4 cup shaved parmesan cheese
Freshly ground black pepper

Instructions:
Place the haricots verts in a large microwave-safe bowl. Cover and microwave on high for 5 to 7 minutes. Remove and drain, if necessary.

In a small bowl, whisk together the sour cream and lemon juice. Pour over the haricots verts and toss to coat.

Serve immediately with shaved parmesan and freshly ground pepper.

Did I change anything? I left out the pepper because I forgot it and I didn’t have any parmesan that I could shave, I just had the regular kind in a can. It worked just fine. Also, I didn’t microwave the green beans, I cooked them on the stove.

What did the family think? No one liked this but me, which quite frankly, I am surprised by. Parmesan makes everything taste better…right? Both hubby and our oldest said they would have rather had their green beans plain. Crazy boys.

Maple Teriyaki Salmon

I hate it when I get ready to cook something and I get the recipe out and realize I was supposed to have been marinating it for the last three hours, but dinner needs to be on the table in an hour. That happened to me this evening, so I tweaked this recipe a little and it still came out great.

Ingredients:
1/3 cup apple juice
1/3 cup maple syrup
3 tablespoons soy sauce
2 cloves garlic, minced
4 (8 ounce) salmon fillets

Instructions:
Spray cooking pan with cooking spray.

Put salmon in pan and then add the rest of the ingredients.

Bring to a boil. Cover pan with lid and reduce heat to medium. Cook for about ten minutes or until fish is cooked through.

What did the family think? Hubby and I liked it. It was very flavorful and tender.

Cinnamon Baked French Toast

The only thing tricky about this recipe is that you have to plan ahead a little bit. If you plan on eating it for breakfast, do the prep work at night. If you are going to have breakfast for dinner, do the prep work in the morning.

Ingredients:
Butter or Cooking Spray
1 loaf Crusty Sourdough Or French Bread
8 whole Eggs
2 cups Half and Half
¾ cups Sugar
2 Tablespoons Vanilla Extract

Instructions:
Grease 9 x 13-inch baking pan with butter. Tear bread into chunks (or cut into cubes) and evenly distribute in the pan.

Mix together eggs, milk, cream, sugar, and vanilla. Pour evenly over bread. Cover tightly and store in the fridge several hours or overnight.

When you’re ready to bake the casserole, preheat oven to 350 degrees. Bake for 45 minutes for a softer, more bread pudding texture. Bake 1 hour or more for a firmer, less liquid texture.

Scoop out individual portions. Top with butter and drizzle with maple syrup.

We had this with scrambled eggs and sausages for dinner.

What did the family think? They thought it was super duper yummy because it is and it makes your house smell fantastic.

Stew and Rice

I told you my recipes were going to be easy this week. I saw this on a commercial on TV. I am not sure which brand of soup they were advertising, but I have a feeling it’s not the one I bought. If I am going to buy soup in a can, I need to be able to read and identify the ingredients on the label.

Ingredients:
Two cans of any thick, stew-like soup or leftover stew from a previous meal
Rice or couscous

Instructions:
Cook rice/couscous according to package directions.

Heat stew.

Serve rice in bowls and pour stew over the top.

What did the family think? Everyone ate it but our oldest. I think all he ate was the rice.

BBQ Pulled Pork and Coleslaw Panini

Yep, we went back to the panini place today to savor some of their delectable creations. This would be great if you have some leftover pulled pork or some leftover BBQ chicken.

Ingredients:
Italian Sandwich Bread
BBQ Pulled Pork
Cole Slaw

Instructions:
Make a sandwich out of the above ingredients. If you have a panini maker, use it. If not, heat a skillet over medium low heat and spray with cooking spray. Place sandwich in skillet and put a heavy skillet on top of it for a few minutes. Flip the sandwich over, place the skillet on top of it again and cook for a few minutes on that side.

What did the family think? I was the only one who had it, but it was good. The addition of the cole slaw reminded me of one of my favorite sandwiches at Jack Stack BBQ in Kansas City.

Turkey, Cranberry and Havarti Panini

A great lady who I used to teach with had the fantastic idea that I review restaurants since I can’t really cook in my kitchen right now. This is the sandwich I ate tonight at our newest favorite restaurant. I didn’t make it, but it’s pretty straight forward, and would be a great way to use up all of those Thanksgiving leftovers.

Ingredients:
Italian Sandwich Bread
Havarti Cheese
Cranberry Sauce
Turkey

Instructions:
Make a sandwich out of the above ingredients. If you have a panini maker, use it. If not, heat a skillet over medium low heat and spray with cooking spray. Place sandwich in skillet and put a heavy skillet on top of it for a few minutes. Flip the sandwich over, place the skillet on top of it again and cook for a few minutes on that side.

What did the family think? I was the only one who had this and it was really good. My only bit of advice is to go easy on the cranberry sauce or you will have a very soggy sandwich. I had this with a cup of Thanksgiving soup which had turkey, green beans, sweet potatoes, some tasty broth, some parsley and some tasty croutons on top.

Sausage, Red Beans and Rice

Hubby took one bite of this and said, “I hope you’re going to blog about this.”

Ingredients:
1 cup long grain white rice
2-3 tablespoons extra virgin olive oil
1 pkg (14 oz) smoked sausage
1 can red beans
Creole Seasoning

Instructions:
Cook rice according to package directions.

Meanwhile, drain and rinse the beans and cut the sausage into coins.

Add olive oil to skillet and cook sausage over medium-high heat. Sprinkle sausage lightly with Creole seasoning. You can always add more spice later, but it’s best to start on the safe side.

Cook sausage for about seven minutes, making sure to stir sausages so that they cook on both sides. Add rinsed beans and heat through.

Serve rice with beans and sausage.

What did the family think? Hubby and I LOVED it. So good. Our youngest ate the sausage and our oldest insisted it was much too spicy. Hubby also added quite a bit more of the Creole seasoning to his bowl.
