Beer Bread

I love homemade bread, but I don’t like baking anything that has yeast in it…all the waiting and kneading…I don’t have time for all that. I haven’t had beer bread in years, but it is so good and you don’t need any yeast…the yeast’s in the beer. 🙂 When I came across this recipe I just had to make it.

Ingredients:
3 c. self-rising flour
3 tbsp. sugar
1 (12 oz.) bottle beer (or can)

Instructions:
Preheat oven to 375 degrees.

Mix together until blended. Pour into greased loaf pan. Bake 45 minutes or until top is lightly browned.

Did I change anything? Just make sure your beer isn’t too “hoppy” unless you want your bread to taste like hops.

What did the family think? They haven’t made it home yet to eat any, but I ate some and it was deeelish. I slathered some butter and honey on it while it was still warm. Yum!

Cream Cheese Scrambled Eggs

We pretty much only eat eggs that are scrambled around here. Occasionally I can sneak some hard-boiled eggs into the line-up, but that is rare. So, I have been toying with some variations on the scrambled egg. My mom used to always make scrambled eggs like this and I LOVED them…they aren’t super fancy, but they sure are good.

Ingredients:
Eggs
Cream Cheese

Instructions:
Scramble eggs in a skillet as you normally would. When eggs are just about done stir in about 1/2 tsp. of cream cheese per egg and stir until melted. You can always add more or less depending on your preferences.

Springtime Lunchbox Wrap

My hubby takes his lunch to work about 99% of the time and since he doesn’t like to take leftovers, that really limits what can go in his lunchbox. He has probably been eating a turkey and cheese wrap practically every day for the past five years. He has been toying with some other options and was looking for a vegetarian alternative as well, so he came up with this and it is mighty good.

Ingredients:
Sandwich wrap, we have been using spelt…whole wheat would be good too
Hummus-any flavor, we have been using roasted red pepper
Lettuce or spinach leaves
Cucumber, sliced
Shredded Carrots

Instructions:
Spread the hummus on the wrap and then pile on the toppings making sure not to add too much so that you can actually roll it up.

What did the family think? Hubby and I have been having these for lunch all this week and they are so good. I think I also like them because they are light and “springy” and I love how different foods start making their way onto our plates as spring and summer arrive.

Lemon Garlic Salmon

This is probably one of the best salmon dishes I have ever made…the salmon was moist and very flavorful.

Ingredients:
2 tablespoons unsalted butter
2 teaspoons minced garlic
1 teaspoon lemon pepper
2 (4 ounce) fillets salmon
1 lemon

Instructions:
Season salmon fillets on both sides with lemon pepper.

In a large skillet, melt butter over medium high heat. Stir in garlic. Place salmon in pan.

Cook for 10 minutes per inch of thickness, or until fish flakes when tested with a fork. Flip fillets halfway through cooking to brown on both sides.

Sprinkle with lemon juice before serving.

Did I change anything? I completely forgot the lemon juice. I had the lemon…just forgot to use it.

What did the family think? There was high drama at dinner that night, but not over the salmon. The salmon was lovely, the 6-year old was not…apparently he felt that his fish sticks were “squished” and that his brother should trade with him because his brother’s fish sticks were not “squished”. I assure you that his fish sticks were totally fine and that he just needed to go to bed and sleep it off.

Chocolate Glazed Pound Cake

Very little effort and you get a dessert that everyone loves and it looks like you’ve been in the kitchen all afternoon preparing it. (It only takes about three minutes.)

Ingredients:
6 oz. chopped bittersweet chocolate
1 stick butter, cut up
1 T honey
1 pound cake (we found one already made in our grocer’s bakery)

Instructions:
Microwave chopped bittersweet chocolate with butter and honey on 75 percent power until melted, about 2 minutes. Whisk until smooth. Place a loaf of pound cake on a rack and drizzle with the glaze.

What did the family think? I am not sure which they enjoyed more…the finished product or the pool of chocolatey goodness that collected underneath the cake…lots of little fingers scooping up the extra chocolate.

Simple Crockpot Roasted Chicken

This is so simple and will be ready for you at dinnertime without you having to do much of anything…

Ingredients:
1 whole chicken (fryer or roasting)
Salt and pepper

Instructions:
Rinse and dry chicken both inside and out and make sure the gizzards, neck, etc. aren’t in the cavity of the chicken.

Place whole chicken in pot. Season with salt and pepper. Cover with lid.

Cook on High 60 minutes. After 60 minutes, put on Low.

Cook on Low for 6 – 8 more hours.

We had this with pierogies and some pineapple.

Did I change anything? The recipe didn’t give exact amounts for the salt and pepper so I didn’t use a lot of salt (1 tsp maybe) but I was pretty liberal with the pepper (3 tsp maybe). You be the judge and season accordingly. It also depends on if you are using sea salt/table salt and how coarse your pepper is.

What did the family think? Everyone loved the chicken. I have made several variations of this over the years and it is a great one to make because I know everyone will eat it and it is so easy.

Orange Grilled Salmon

This is a great dish…a little bit citrusy and a little bit sweet.

Ingredients:
1 lb. salmon
2 oranges
1/4-1/2 cup brown sugar (depending on how sweet you want it)
Salt

Instructions:
Place salmon skin side down on a large piece of aluminum foil.

Squeeze one orange over the top then sprinkle generously with the brown sugar and salt.

Cut the second orange into slices and layer over the top.

Completely cover with the aluminum foil and seal then grill on medium heat until fully cooked.

What did the family think? Hubby and I both liked it, but he thought it needed some tartar sauce for dipping, but he always thinks that about any fish dish.

Nutella Waffle Bits

A smaller version of a recipe that’s in Food Network’s magazine this week….bite-sized yumminess.

Ingredients:
Mini-waffles
Nutella
Strawberries, thinly sliced (optional)
Cocoa powder (optional)

Instructions:
Toast waffles and let cool.

Spread Nutella on one waffle and place a strawberry slice on top. Top with a second waffle to make a sandwich. Dust with cocoa powder. Enjoy!

What did the family think? We tried these both with and without strawberries and they are both great!

Itty Bitty Pies

Several, several years ago I made these with my nieces at Christmas. I hadn’t made them since and I have no idea why because they are ridiculously easy and crazy good.

Ingredients:
Cooking Spray
Your choice of pie filling (apple and cherry are what we’ve tried)
Pillsbury refrigerated pie crusts…the kind you roll out

Instructions:
Preheat oven to 425 degrees.

Spray cookie sheet with cooking oil.

Let pie crust sit out for about five minutes before unrolling. You will use both crusts that are in the package.

Unroll pie crusts and use a wide-mouth glass to cut circles out. I use the Pampered Chef circle cutter, so you use that if you have one of those.

You should have about 12 circles when you are done depending on how big your circles are and how close together you cut them out.

Lay out one circle and put a dollop of pie filling in the center and cover with another circle. Use a fork to press edges together. Continue until you have used all your circles. If you have one circle left over you can put a little filling in it and just fold it in half.

Place pies on the cookie sheet and bake for 5-7 minutes or until they start to get golden brown.

What did the family think? These are so spectacularly awesome.

Mini Waffle Ice Cream Sandwiches

I got this idea from this month’s Food Network magazine. They used the big waffles, but I thought that seemed like a little too much dessert and way too messy. Plus, if you use the little waffles you can have more than one and try a different ice cream flavor in each one.

Ingredients:
Mini waffles
Ice cream

Instructions:
Toast the waffles and let cool.

Scoop ice cream onto one waffle and top with another waffle. Voila! Dessert!
